Pesto lovers, rejoice! This three-in-one Basil, Coriander, and Parsley Pesto is a flavorful twist on the classic. The inspiration for this recipe came after a retreat when we found ourselves with an abundance of coriander, basil, and parsley. Instead of letting them go to waste, we transformed them into pesto—truly "One for all, and all for one" pesto!
A Pesto That Stands the Test of Time
With the right combination of ingredients, this pesto can be stored for weeks or even months in the refrigerator. In fact, we once made coriander pesto to sell at a supermarket to help fund our school. A few leftover jars were stored in the fridge at our center and forgotten for a year and a half. Upon returning from a long tour, I was hesitant to open them—but to my amazement, the pesto was perfectly preserved. The flavor, bright green color, consistency, and texture remained completely intact even after all that time! This experience reaffirmed how oil and natural ingredients help preserve pesto beautifully.
A Nutritious and Versatile Recipe
This recipe is made with fresh basil, coriander, and parsley leaves, combined with roasted cashew nuts or pine nuts, fresh lemon juice, raw honey, unrefined marine salt, and olive oil or coconut oil. Each ingredient adds its own depth of flavor and health benefits: Cashew nuts or pine nuts – Both are excellent choices. Pine nuts bring a traditional nutty richness, while cashews add a creamy, slightly sweet twist to the pesto. Olive oil or coconut oil – Olive oil provides a silky texture and luxurious taste, whereas coconut oil adds a subtle nuttiness. If you’ve always used olive oil and pine nuts, try switching things up with cashew nuts and coconut oil for a fresh new take!
