You can make these quick gel pies using pulpy fruits like papaya, blueberry, mango, strawberry, or melons.
When we made this recipe during harvest time, we first spent a lot of time collecting raspberries, one fruit at a time, from our plants. We have expansive raspberry fields with nearly 3000 berry plants, harvested in May and June. With the abundant raspberries, we created a variety of desserts. This raspberry jelly tart was shared with many volunteers at farmer's markets in Portugal and Covilha.
Everyone loved the tart, especially young people with a penchant for sweets. It was particularly embraced by those who prefer vegan foods but lack cooking skills.
Raspberries are delightful year-round, whether fresh or frozen. These beautiful gems are not only tasty and versatile, but they also boast excellent nutritional benefits. One cup of raspberries provides more than half the daily vitamin C requirement, supports immunity, improves skin health, and aids collagen synthesis. They also offer manganese and vitamin K, essential for bone health—though levels of vitamin E, B vitamins, magnesium, copper, iron, and potassium are lower.
